Ingredients

  • 1 cup cashews
  • 2 cups oats
  • Pinch of salt
  • ¼ cup melted coconut oil
  • 2 scoops Vanilla Vega Essentials or Clean* Protein
  • 2 tbsp cashew or almond drink (plus a little extra if needed)
  • 65g dark chocolate, roughly chopped
  • 1 cup almond butter
  • ¼ cup maple syrup

Instructions

  1. Place the cashews and oats in a food processor and process to a fine powder. Add the remaining ingredients except the chocolate and blitz again until the mixture comes together into one lump, adding a splash more plant-based drink if the mixture is too dry.
  2. Knead in the chocolate and then roll into walnut-sized balls.
