Vegan Cookie Dough Energy Balls

Ingredients
- 1 cup cashews
- 2 cups oats
- Pinch of salt
- ¼ cup melted coconut oil
- 2 scoops Vanilla Vega Essentials or Clean* Protein
- 2 tbsp cashew or almond drink (plus a little extra if needed)
- 65g dark chocolate, roughly chopped
- 1 cup almond butter
- ¼ cup maple syrup
Instructions
- Place the cashews and oats in a food processor and process to a fine powder. Add the remaining ingredients except the chocolate and blitz again until the mixture comes together into one lump, adding a splash more plant-based drink if the mixture is too dry.
- Knead in the chocolate and then roll into walnut-sized balls.
